This is the time of the year when even the most reluctant party-givers decide to entertain friends or colleagues at home and then spend days agonising over the food.  This one-day course helps to minimise the fuss of party catering by introducing a whole range of delicious and simply prepared buffet dishes.  The day will begin by demonstrating several different kinds of canapes, and then move on to two three-course menus with dishes ranging from classic to modern, with some Mediterranean, Middle Eastern and Asian flavours thrown in. Recipes can be easily adapted for large or small parties.  
A careful balance is struck between perennial favourites – potato and chorizo, and flat parsley soup or colcannon soup, smoked mackerel, beetroot and horseradish with rocket leaves, slow-roasted pork with fennel and spicy aubergines, Keralan  prawns in a fragrant coconut broth, duck with kumquats and duck legs with sweet juicy onion and thyme leaves, a Christmas green salad with lambs lettuce, chicory and pomegranate seeds... frosted lemon meringue cake, cranberry kuchen,   yoghurt and fresh herb cheese with homemade crackers – and some more exotic ideas which are sure to make guests gasp in admiration.  All of the recipes are genuinely easy and can be prepared in advance, leaving you free to enjoy your own party!
Throughout the course there is a strong emphasis on presentation – those vital finishing touches which make festive food look irresistible.  Students will have the opportunity to taste all the dishes prepared during the course.  A light lunch is included.
