Huge excitement when Ballymaloe House won the Trolley of the Year Award for the Ballymaloe Sweet Trolley at the Inaugural World Restaurant Awards in Paris earlier this year. Pastry Chef, JR Ryle and his team create the magic, a choice of six or seven delicious desserts every evening, always a home-made ice cream, a gorgeous meringue confection, a seasonal compote perfumed with elderflower, rose geranium or saffron., something with superb chocolate....
Could be Myrtle’s Marjolaine or a Chocolate and gold leaf tart... a feather light mousse, maybe a Summer or Autumn fruit fool with the essence of the fresh currants and berries from the walled garden at Ballymaloe House.... how tempting does that sound... and more ......     JR loves to share his secrets.....
