Californian Claire Ptak, owner of Violet Bakery in London, creates recipes that are both nourishing and indulgent. Claire Ptak has gone from running a successful — if comparatively hidden — gem of a bakery on a quiet residential street in Hackney, east London, to the internationally known mastermind of the cake served at the royal wedding of Meghan Markle and Prince Harry.
Claire has been to the school several times before and each time she leaves we have a few more of her delights to add to our repetoire. Now Claire is coming once more to the school to show us all how to make the wonderful treats.
Baking at the Violet Bakery is done using simple ingredients including whole grain flours, less refined sugars, and the natural sweetness and nuanced hues of seasonal fruits.
With a careful eye to taste and using the purest ingredients, Claire creates the most flavourful iterations of classic cakes, as well as new treats for modern plates.Claire started her business as a market stall on Broadway Market, Hackney, cooking from home before opening the café in 2010.
Every Saturday people queue up at her stall on nearby Broadway Market (which sells out every week) to sample her dark ginger molasses cake, or to buy a box of miniature cupcakes, iced with chocolate, salted caramel or the essence of whatever fruit is in season. Or they visit the Violet Bakery cafe for a mug of tea and a lovely, grainy polenta muffin topped with a slice of blood orange or for one of Claire’s scones, whose flavour changes daily.
